Tourlu (Armenian Vegetable Casserole)

Tourlu (Armenian Vegetable Casserole) is a traditional Armenian recipe for a classic casserole of green beans, aubergine, onions, carrots, celery, bell pepper and potatoes cooked in a mix of tomatoes and catsup flavoured with herbs and finished with sour cream. Ingredients:

225g green beans, cut in 5cm lengths
1 medium aubergine (eggplant), cubed
2 onions, chopped
3 carrots, peeled and sliced
2 celery sticks, sliced
2 courgettes, sliced into rounds
1 bell pepper, de-seeded and chopped
2 potatoes, peeled and cubed
440g tinned, chopped, tomatoes
60ml olive oil
120ml catsup
1½ tsp sugar
1½ tsp basil
1/4 tsp freshly-ground black pepper
3 small courgettes, sliced into rings
240ml sour cream or plain yoghurt

Method:

Combine the beans, aubergine, onion, carrots, celery, courgettes, bell pepper and potatoes in a 5l casserole dish. Add all the remaining ingredients (except the courgette and yoghurt) then stir gently. Cover the dish and transfer to an oven pre-heated to 170°C for 90 minutes, or until the vegetables are almost tender (every 30 minutes take the lid off the pan and baste the vegetables with the juices).

After about 90 minutes add the sliced courgette to the casserole and mix in gently. Return to the oven and bake, uncovered, for a further 20 minutes. Divide between four plates and serve hot with a generous spoon of sour cream or plain yoghurt.
