Spaghetti and Eyeballs is a traditional American recipe for a classic Halloween dish of spaghetti served with meatballs that have olive irises. The full recipe is presented here and I hope you enjoy this classic American version of: Spaghetti and Eyeballs.
In a bowl, mix together the beef, breadcrumbs, ketchup, egg, black pepper and oregano. Combine the ingredients with your fingers then divide into about 20 balls and press an olive into each one (with the pimento sticking out) to form the iris of the eye. Arrange these on a baking dish, pour over the spaghetti sauce, cover with foil, then place in an oven pre-heated to 170°C and bake for about 40 minutes.
About 15 minutes before the eyeballs are due to be ready fill a large pan with the 3l water and add the salt. Bring the mixture to a boil and use to cook the spaghetti. When tender, drain the pasta to a large serving bowl and toss with the butter.
When the eyeballs are cooked through, carefully spoon on top of the spaghetti, making certain that the olive irises point up. Spoon the spaghetti sauce from the pan over and around them and serve.
If you are feeling particularly artistic then, just before serving you can add some thinly-sliced black olives to the eyeballs to form eyelashes.
