Ingredients:
2 teaspoons of olive oil
1 garlic clove, finely chopped
1 medium onion, finely chopped
1 medium carrot, finely chopped
3 celery stalks, finely chopped
180ml tomato purée
300g mushrooms, halved and thinly sliced
Salt and pepper to taste
Method:
Add the olive oil to a large pan and brown the garlic, onion, carrots and celery. Fry until the onions are transparent (about 30 minutes) then add the mushrooms and cook until they are very soft (about 20 minutes).
Add the tomato purée along with about 400ml water. Bring to the boil then reduce to a simmer, cover and cook for an hour. Stir every 20 minutes to prevent sticking and if the water level reduces too much add a little more.
This gives you a basic vegetable spaghetti sauce to which you can add minced beef, seafood, or whatever takes your fancy.
