Ingredients:
750g beef, cut into serving pieces
300g rice, well washed
60ml groundnut oil
1 onion, finely chopped
3 tomatoes, blanched, peeled, de-seeded and chopped
1 hot chilli, pounded to a paste
salt, to taste
1 Maggi cube (or meat stock cube)
1/2 small cabbage, cut into chunks (optional)
boiled plantain pieces, to accompany
Method:
Heat the oil in a large pot, add the onions and fry until soft (about 4 minutes) then add the meat and fry until lightly browned. Crush the tomatoes and add these to the pot at this point.
Pour in 2l water and bring to a boil then season to taste with salt before adding the chilli and crumbling in the Maggi cube. Return to a simmer, cover the pan and cook for about 60 minutes, or until the meat is tender.
Remove a ladleful of the broth and set aside. Stir in the rice and add the cabbage pieces then increase the heat and cook for about 20 minutes, or until the rice is tender.
Turn into a serving dish, pour over the reserved stock, top with some of the cabbage, the boiled plantain (if using) and meat and serve.
