This is a traditional Ghanaian soup (stew), a classic one-pot dish typically served with rice (but which can also be served with FuFu).
Ingredients:
675g boneless beef or goat meat, cut into 2cm cubes
500ml water
2 tsp salt
1/4 tsp ground ginger
1/8 tsp chilli powder
675g Hubbard squash, peeled and cut into 3cm cubes
2 medium tomatoes, chopped
300g French beans, trimmed and cut into 3cm lengths
2 hot chillies, pounded to a paste (omit for a milder taste)
Method:
Combine the beef, water, salt, ginger and chilli powder in a flame-proof casserole (or Dutch oven) and bring to a boil. Reduce to a simmer, cover and cook gently for about 90 minutes, or until the meat is tender.
Add the squash and chillies and cook for a further 40 minutes. Remove the squash from the dish and either mash or puree then return to the pot along with the tomatoes and beans. Bring the mixture to a boil then reduce to a simmer, cover and simmer for about 15 minutes, or until the beans are tender.
Transfer to a serving dish, top with hot rice and serve.
