Puy lentils (also known as French green lentils) are a specific form of Lentil Lens culinaris that are small and slate-green in colour, often with a delicate blue marbling. Puy lentils are known after their region of production, the Le Puy region of France and are generally considered to be the best lentil because of their unique peppery flavour and the fact they hold their shape during cooking. They make an excellent addition to soups and casseroles and go well as an accompaniment to game birds.
