Winter Parsnip Stew

Ingredients:

1 tbsp oil
2 celery sticks, minced
3 garlic cloves, mashed
4 large tomatoes, diced
1 large red chilli, chopped
1 1/2 tbsp paprika
1 tbsp dried oregano, crumbled
1/2 tsp salt
1 medium butternut squash, peeled, de-seeded and diced
2 large parsnips, diced
12 pearl onions, peeled
2 medium carrots, diced
600ml water
400g cooked kidney beans, drained
150g sweetcorn
8 broccoli florets

Method:

Heat the oil in a pan and use to fry the celery and garlic for 4 minutes. Add the tomatoes, chilli and seasonings then stir to combine and cook gently for about 8 minutes, or until the tomatoes release their juice and the mixture thickens.

Now add the squash, parsnips, onions, carrots and water. Bring the mixture to a simmer, cover and cook for about 30 minutes, or until tender (stir occasionally as the stew cooks). Add the beans and broccoli and cook for about 8 more minutes, or until the broccoli is tender. Serve hot with rice or potatoes.
