Garaasa be Dama (Sudanese Flatbread with Meat Sauce) is a traditional Sudanese recipe for a classic flatbread leavened with baking powder and flavoured with spices and beef that's fried to cook. Ingredients:

2 Garaasa per person.
6 onions, chopped
4 tbsp tomato paste
80ml oil
3 garlic cloves, crushed
250g beef steak, cut into very small pieces
720ml water
3 tomatoes
1/2 green bell pepper
1 tsp salt
1 tsp cardamom
1 tsp cinnamon

Method:

Add the oil to a pot and use to fry the onions on medium heat. Cover the pot and allow the onions to sweat down, stirring occasionally, until very soft. Now 200ml of the water, bring to a simmer and cook, covered for about 10 minutes, or until the water has almost evaporated. Stir the onions then blend-in the chopped tomatoes. Add the steak to the pot along with the bell pepper, salt, cardamom and cinnamon.

Cover the pot and cook for 3 minutes. Now add the tomato paste and stir-in. Add enough water to the pot until the sauce becomes smooth and slightly runny. Cover and allow to simmer for 10 minutes, adding more water as necessary.

Plate out the garaasa, pour the meat sauce over the top and serve immediately.
