Vodhino Stifadho (Beef and Onion Stew) is a traditional Cypriot recipe for a classic stew of beef and baby onions in a tomato and vinegar base. The full recipe is presented here and I hope you enjoy this classic Cypriot version of: Beef and Onion Stew (Vodhino Stifadho).

Ingredients
1kg beef, cut into small cubes
1.5kg very small onions, peeled but kept whole
250ml oil
4 garlic cloves, finely chopped
3 bayleaves
10 black peppercorns
1 small piece of cinnamon
120ml vinegar
500g grated tomatoes
salt, to taste
Method:
Heat the oil in the base of a flame-proof casserole. Add the whole onions and fry until lightly browned. Remove with a slotted spoon and set aside. Add the garlic to the casserole and cook until soft then add the beef and fry until nicely browned. Add the vinegar and bring to a boil then stir in the tomatoes, salt, black pepper, bayleaves, cinnamon and 500ml hot water.
Stir the mixture and cook, covered, over low heat for about 90 minutes. At this point add the onions and stir to combine. Bring back to a simmer and cook for 30 minutes more.
Serve hot, accompanied by vegetables cut into thick slices.
