This meat kebab counts as one of the national dishes of Turkmenistan. Kebap is a national dish of Turkmenistan and a true symbol of the country’s warm hospitality! These succulent meat skewers are marinated in aromatic spices and grilled over an open flame until charred and fragrant.

Ingredients:

400g lamb, beef or chicken
2–3 tbsp olive oil
2 garlic cloves garlic, chopped
1 tsp paprika
1 tsp ground cumin
Salt and freshly-ground black pepper to taste
Juice of 1 lemon
Wooden skewers (soaked in water)

Method:

Pound together the oil, garlic, paprika, cumin, lemon juice and seasonings in a mortar to form a paste. Cut the meat into cubes, toss with the pounded marinade mixture and set aside to marinate for at least an hour.

In the meantime, pre-heat your barbecue.

After this time, thread the meat onto the soaked wooden skewers.

Grill the kebabs over medium heat for 10–15 minutes, turning them regularly during this time to cook evenly.

Serve the kebabs hot, ideally with fresh bread (eg corek) or a crisp salad.
