Tacos de Carnitas (Pulled Pork Tacos) is a traditional Mexican recipe for a classic taco with tortillas filled with pulled pork (carnitas), tomato salsa, vegetables, cheese and refried beans. This is the classic way of using Mexican pulled pork as a taco filling and the classic version can be found throughout Mexico and across the border in Arizona.
Ingredients Pork Carnitas Spicy Tomato Salsa
Small tortillas (corn or flour)
Avocado slices
Tomato slices
Lime wedges
White onions, finely sliced or diced
Coriander leaves
Grated cheese
For the Dressed-up Refried Beans:
25g finely chopped onion (white, brown or yellow)
1 garlic clove, minced
2 tbsp olive oil
400g frijoles refritos (refried beans) (substitute a tin, if desired)
1 tsp onion powder (or garlic powder)
1/2 tsp ground cumin
80–120ml sour cream
Method:
For the Refried Beans: Set a saucepan over medium-high heat. Once hot add the oil and use to fry the onion and garlic for 3 minutes, stirring occasionally.
Now add all the remaining ingredients (except the sour cream) and stir to combine. Add about 4 tbsp of the sour cream. Stir to combine then continue adding sour cream a tablespoon at a time until the mixture reaches your desired consistency.
Allow the beans to warm through then take off the heat.
For the carnitas tacos: warm the tacos according to the package instructions.
Pile the Pork Carnitas mixture on a warmed serving plate. Spoon the cooked refried beans mixture onto another serving plate and top with grated cheese.
Arrange the coriander, lime, onion, tomato and avocado on another plate.
Serve the ingredients with a spicy tomato salsa.
