Szureti Birkaporkolt (Mutton Porkolt) is a traditional Hungarian recipe for a classic stew of mutton with vegetables cooked in a beef stock base flavoured with caraway seeds and chilli. Ingredients:
2.25kg mutton, cubed
4 large onions, chopped
120ml olive oil
1 tbsp paprika
salt and freshly-ground black pepper, to taste
2 medium green bell peppers, chopped
4 garlic cloves, chopped
1 tbsp caraway seeds, lightly crushed
1 medium chilli (eg jalapeño), chopped
2l beef stock
Method:
Heat the oil in a pan and use to fry the onions and meat until the meat is well browned all over. Add the paprika and season with salt and black pepper before frying for 3 more minutes before adding the green bell pepper, chilli, garlic and caraway seeds. Fry for another 5 minutes, stirring frequently then add the beef stock.
Bring the mixture to a boil then reduce to a simmer and cook for 20 minutes, or until the meat is tender and cooked through. Ladle into 4 warmed soup bowls and serve.
