Spanagh Geragoor (Spinach and Rice Stew) is a traditional Armenian recipe for a classic dish of spinach stewed with rice in an onion and tomato puree sauce. The full recipe is presented here and I hope you enjoy this classic Armenian version of: Spinach and Rice Stew (Spanagh Geragoor).

Ingredients:
450g spinach
50g rice
1 onion, finely chopped
3 tbsp tomato purée
3 tbsp butter, for frying
salt and black pepper, to taste
Method:
Melt the butter in a pan then add the onion and fry gently until lightly browned (about 12 minutes). When done, take off the heat
In the meantime, tear the spinach, into pieces, place in a colander and wash. Drain well then transfer to a pan and bring to a simmer. Cook for about 2 minutes, or until wilted, then add the onions, rice and tomato purée. Add just enough water to cover the contents of the pan then season to taste before cooking over medium heat until the rice is tender and all the liquid has evaporated (about 20 minutes).
