Ingredients:

2 tomatoes, blanched, peeled, de-seeded and chopped
3 red potatoes, peeled and finely diced
2 carrots, finely diced
3 small courgettes, chopped
1 handful of French beans, sliced into thirds
1 leek (white part only), thinly sliced
1 onion, chopped
2l water
coarsely-ground black pepper, to taste
1/2 tsp dried thyme
1 bayleaf
450g cooked cannelini beans (tinned is fine), rinsed and drained
150g frozen green peas
70g small pasta (eg mini penne)
120ml basil pesto

Method:

Combine the tomatoes, potatoes, carrots, courgettes, French beans, leek and onion in a large stock pot. Add the water then stir in the salt, black pepper, thyme and bayleaf. Bring the mixture to a boil, reduce to a simmer then cover and cook, covered, for 20 minutes. Add the beans and peas at this point then cover the pan and continue cooking for 5 minutes more.

Finally add the pasta and cook for about 8 to 12 minutes, or until the pasta is done. Take the pan off the heat, stir in the pesto then cover and set aside to stand for 10 minutes for the flavours to combine.

Remove the bayleaf then serve ladled into warmed soup bowls. If desired, garnish with grated Parmesan cheese and a little additional pesto.
