Nimino de Peixe (Nimino of Fish) is a traditional Mozambican recipe for a classic one-pot stew of cassava in a chilli, tomato, dried mango, coconut milk and onion base that's finished with fried fish. Ingredients:
4 large cassava tubers or 6 plantains or 6 sweet potatoes
8 pieces of fish fried in cassava flour coating
4 pieces of dried mango (atchar)
1 large onion, sliced
1 large coconut (grate the flesh, wrap in a cloth and twist to extract the milk)
6 piri-piri chillies, chopped
10 small tomatoes, quartered
1 tbsp ground turmeric
salt, to taste
Method:
Peel the cassava or plantains or sweet potatoes. Bring a pan of lightly-salted water to a boil, add the cassava (or plantain or sweet potatoes) and boil for about 25 minutes or until just tender. Drain and slice into 3cm cubes.
Wash the pan the add the chillies, onions, tomatoes and mango pieces. Pour in the coconut milk and add enough water to just cover the ingredients. Bring to a boil then add the turmeric and season to taste with salt. Stir in the cubed cassava (or plantain or sweet potatoes) and simmer gently, covered, for about 20 minutes or until thickened.
Sit the fried fish on top and steam for 5 minutes to heat through. Serve hot.
