Mauritanian Thieboudienne

Method:

Clean gut and scale the red snapper then either keep whole and cut three deep slashes on both sides (or cut them into steaks).

For the garlic blend, pound together the garlic, parsley salt and black pepper in a mortar. Rub this mixture all over the inside and outside of the fish.

Heat the oil in a large pan and use to fry the garlic paste coated fish for about 15 minutes, or until cooked through. Remove from the pan and set aside.

Using the same oil in which you fried the fish add the onion and for 2 minutes. Stir in the tomato purée, stirring to combine until the tomato purée blends with the oil and the onions. At this point mix in 1l water, stirring to combine. Add in all the vegetables (including the whole habanero chillies) along with the flaked dried fish and the fried fish.

Season to taste with salt and the spices, if using. Bring everything to a boil and cook for 15 minutes.

At this point remove the vegetables and fish and set them aside. Mix the tamarind paste with a little of the stock and the lime juice, Pour into a bowl and set aside.

Wash the rice thoroughly until the water runs clear (to remove the excess starch). Add to the washed rice to the tomato-based stock. Mix well to combine, bring to a simmer and cook for 20 minutes over low heat.

Check the liquid levels (you want all the liquid absorbed by the rice). Give it a quick stir and simmer for about 10 minutes more until the rice is tender and soft.

Arrange the rice on a serving dish, top with the vegetables and fish and bring to the table.
