Home-made Maggot Stew

Ingredients:

2 tbsp vegetable oil
45g flour
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp garlic powder
450g stewing steak cut into 3cm cubes
800g chopped tomatoes (with juice)
350ml beef stock
1 tsp fresh thyme, chopped
1 bay leaf
4 carrots, peeled and diced
200g green beans, trimmed
100g orzo pasta

Method:

Combine the flour salt, black pepper and garlic powder in a bowl and toss the cubed beef in this until well coated. Add the oil to a large pot and when hot use to fry the beef until nicely browned then add the tomatoes, beef stock, thyme and bayleaf. Bring to a boil then reduce to a low simmer, cover, and cook for one hour.

Now add the carrots and beans to the pan and continue cooking for a further 45 minutes. When the stew is almost done, cook the orzo pasta in a separate bowl, according to the package instructions, until almost tender then drain and add to the stew (orzo pasta looks like large rice gains and these are your 'maggots').

Allow to cook for 1 minute then take off the heat and stir to combine. Serve hot with mashed potatoes.
