Havgitov Kufta (Bulgur Wheat with Eggs and Tomatoes)

Havgitov Kufta (Bulgur Wheat with Eggs and Tomatoes) is a traditional Armenian recipe for a classic dish of bulgur wheat cooked in a tomato-based sauce to which scrambled eggs are added. Ingredients:

600g fresh tomatoes, blanched, peeled and chopped
150g fine bulgur wheat
1 onion, finely chopped
4 eggs
6 tbsp butter
90g flat-leaf parsley, finely chopped
salt and freshly-ground black pepper, to taste

Method:

Add the tomatoes to a pan and bring to a simmer. Continue cooking for about 10 minutes, or until the tomatoes begin to break down and release their liquid then stir-in the bulgur wheat. Remove from the heat then cover and set aside to finish cooking for about 12 minutes.

Meanwhile, melt the butter in another pan and use to gently scramble the eggs. Take off the heat and allow to cool slightly then stir into the tomato mixture before adding the onions. Season well with salt and black pepper then stir-in the parsley.

This dish can be served either warm or cold.
