This dish can be made with mixed beans as here it's also commonly made with just sugar beans (the bean staple of southern Africa).
Ingredients:
150g dried cow peas
150g dried haricot beans
150g dried sugar beans (substitute pinto beans)
100g maize meal or samp
pinch of baking soda
salt to taste
Method:
Wash and pick over the beans, place in a bowl and cover with water then set aside to soak over night.
The following day, place the beans in a large pan, cover with water (this should come 5cm above the beans) and add a pinch of baking soda. Bring to a boil, reduce to a simmer, cover the pan and cook for about 80 minutes, or until the beans are tender.
At this point, whilst stirring constantly, add the maize meal or samp in a slow, steady, stream, ensuring that no lump forms. Stir well to combine then reduce to a low simmer and cook for about 15 minutes more, or until the mixture is thick and porridge like and the maize meal no longer tastes raw.
If the mixture looks too thick then add more water. If too thin continue cooking until thickened.
