Courgettes à la Monégasque (Monaco-style Courgettes)

Courgettes à la Monégasque (Monaco-style Courgettes) is a traditional Monegasque (from Monaco) recipe for a classic accompaniment of courgettes (zucchini) that are boiled until tender and finished by frying in butter until golden. Ingredients:

1kg courgettes (zucchini)
50g butter
salt and freshly-ground black pepper, to taste

Method:

Choose firm, young, courgettes for this dish.

Bring a pan of lightly-salted water to a boil. Slice the courgettes into 2cm pieces than add to the pan. Boil for about 14 minutes, or until just tender.

Drain in a colander and refresh under cold, running, water.

Melt 50g butter in a pan. Add the cooked courgettes and fry, tossing frequently (do not pierce with a fork) until golden brown in colour.

Season to taste with salt and black pepper, then serve.
