Ingredients:

450g stewing beef, cut into 3cm cubes

75g flour
125ml red wine
1/4 tsp paprika
250ml passata (tomato juice)
salt and freshly-ground black pepper, to taste
1 garlic clove, crushed
500ml water

Method:

Season the meat liberally with salt, black pepper and paprika. Melt the butter in a pan, add the garlic then use to brown the meat until well coloured on all sides. Remove the meat with a slotted spoon and set in a pan.

Pour the wine over the beef and set aside. Scatter the flour over the butter remaining in the original pan and whisk until smooth. Cook over medium heat for about 2 minutes, or until lightly browned then stir-in the passata and water and whisk into the butter and flour mixture until smooth.

Add to the pan with the meat, bring to a simmer and cook, gently, stirring frequently, for about 20 minutes, or until the meat is tender and the sauce is thick.
