Beef Mechado is a traditional Filipino recipe for a dish of beef stewed with onions, potatoes, carrots and bell peppers in a vinegar, passata and soy sauce stock. The full recipe is presented here and I hope you enjoy this classic Filipino version of: Beef Mechado.

Ingredients:
1kg beef, cut into chunks
125g pork fat, sliced into strips
4 onions, peeled and quartered
5 medium potatoes, quartered
1 medium carrot, cut into 1cm thick sections
2 red bell peppers, de-seeded and sliced
500ml beef stock
3 bayleaves
60ml vinegar
500ml passata (tomato sauce)
250ml soy sauce
salt and freshly-ground black pepper
Method:
Cut and incision into the beef chunks and insert a strip of the pork fat in the centre. Add the beef to the base of a flame-proof casserole then pour over the tomato sauce, soy sauce, bayleaves and beef stock. Bring the mixture to a boil then reduce to a simmer and cook for about 40 minutes, or until the beef is tender.
Add the vinegar and boil for 2 minutes then add the potatoes, onions, carrot and bell pepper. Return to a simmer and continue cooking for about 35 minutes, or until the potatoes and carrots are cooked. Stir occasionally to prevent sticking.
