Bahamanian Boil Fish

Method:

Wash the fish with salt and half a lime then rinse under cold, running, water until the salt is removed and the water runs clear.

Combine the chillies, onion, potatoes, bacon and butter in a heavy-based saucepan. Set over medium heat and cook gently until the butter has just melted and coats all the other ingredients.

Add two generous pinches of salt, followed by the fish. Pour over enough water to just barely cover the fish (you don't want to much water or the stock will be weak).

Bring to a gentle simmer, cover with a lid and continue simmering for about 12 minutes, or until the potatoes are just fork tender.

Remove from the heat, add in the juice from the remaining 1 1/2 limes and adjust the seasonings to taste.

Turn into a warmed serving bowl and bring to the table.

Traditionally it's served with Bahamanian 'journey' bread (ie johny cakes) or grits.
