Bahamian Yellow Grits

Method:

Pour the water into a medium-sized saucepan then bring to a boil (if you want to use milk, substitute 250ml of water with milk and bring to a boil).

Gradually stir the yellow grits into the boiling water. Once added, whisk continuously to prevent lumps from forming.

Add 1 tsp of salt to the mixture. Continue whisking.

Now reduce the heat to low and cover the saucepan. Allow the grits to simmer gently for about 20-25 minutes, stirring occasionally to prevent sticking. The grits should be thick and creamy.

Add-ins: For creamier grits, stir in 1 tbsp of butter. Adjust the seasoning with salt and add black pepper to taste.

Serve the Bahamian yellow grits hot as a side dish. They pair perfectly with Bahamian steamed fish, sardines, or your favourite breakfast protein (eg eggs and bacon).
