Ingredients
200g short-grain or paella rice, washed and drained
200g prepared squid
1 medium monkfish tail
12 clams
12 prawns, peeled
100g cooked peas
1 small onion, finely chopped
1 green bell pepper, de-seeded and finely chopped
2 garlic cloves, finely chopped
1l fish stock
chopped parsley
salt and ground white pepper, to taste
olive oil

Method:
Wash and clean the fish, seafood and shellfish then cut into serving-sized pieces.
Add 2 tsp oil to a pan and use to gently fry the onion, garlic and bell pepper for about 6 minutes, or until they start to colour. At this point stir in the monkfish pieces.
Cook for 3 minutes then stir in the rice. Cook, stirring constantly, until the rice is coated in the oil and begins to turn translucent. Crumble over a pinch of saffron and add the hot fish stock along with the peas.
Bring to a simmer and cook for 10 minutes then add the clams and prawns. Cook for 10 minutes more, or until the rice is tender. You will end-up with a rather soupy looking dish.
Season to taste with salt and white pepper, ladle into warmed bowls, and serve garnished with chopped parsley.
