Arni me Fasolia (Lamb with Haricot Beans) is a traditional Cypriot recipe for a classic stew of lamb with haricot beans in an onion, tomato and celery base flavoured with bacon. Ingredients
1kg breast of lamb, sliced into 5cm pieces (or use lamb shanks)
200g haricot beans
100g onions, coarsely chopped
4 slices of bacon, thinly chopped
2 tbsp tomato purée
1 celery stick, coarsely chopped
2 tbsp olive oil
1 chicken stock cube
cooking oil
salt and freshly-ground black pepper, to taste
Method:
Wash the beans, place in a large bowl and cover with plenty of water then set aside to soak over night.
The following day, drain the beans then place in a large pot and cover with water. Bring to a boil then cook for 60 minutes.
Drain the beans, re-cover with water then bring back to a boil before adding the onions, celery, bacon, olive oil and tomato purée. Stir to combine and bring back to a boil.
Reduce the heat to a gentle simmer and leave to cook gently as your prepare the meat.
Heat a little oil in a pan, add the meat and fry gently until lightly browned. Turn into the bean mixture, stir to combine, then bring back to a simmer, cover and cook for about 80 minutes more or until the meat and the beans are tender.
