Armenian Bamiya (Okra Stew) is a traditional Armenian recipe for a classic stew of baby orka cooked in meat stock and tomato puree flavoured with onions, lemon juice and dried apricots. Ingredients:
500g baby okra, tops trimmed
2 red onions, sliced
360ml meat stock
60ml tomato purée
200g cooked chickpeas
12 dried apricots
juice of 1/2 lemon
salt, to taste
Method:
Add a little lard or butter to a pan and use to fry the onions until soft (about 6 minutes). Whisk together the stock and tomato purée in a bowl then add to the pan. Bring the mixture to a boil then stir-in the lemon juice and okra.
Reduce to a simmer then stir in the chickpeas before arranging the apricots on top and cooking for about 60 minutes, until the apricots are tender and the stew has thickened.
