Syllabub is a classic British dessert made from a combination of whipped cream, sherry or white wine and sugar. It is often infused with lemons (as in the classic Lemon Syllabub) but a range of fruit flavourings such as elderflower, gooseberry and rhubarb can be used. The origins of the dessert go back to Elizabethan times and should always be served chilled.
