These recipes, all contain Charcuterie as a major wild food ingredient.

This is a generic term for any and all of the products that were traditionally sold by charcutiers (pork butchers) and includes any products made from pork meat or offal such as hams, fresh and smoked sausages, pâtés, black puddings and salamis.

In restaurant terms a charcuterie is a platter composed of mixed cuts of meats and sausages that have been prepared in various ways.
