Karnache (Bulgarian Pork Sausage Rings)

Karnache (Bulgarian Pork Sausage Rings) is a traditional Bulgarian recipe for a classic sausage made from a blend of minced pork, breadcrumbs and spices stuffed into thin lamb intestines that are shaped into spirals and barbecued to cook. Ingredients:

500g minced pork (use a fatty cut)
60g breadcrumbs
1 tbsp minced savory
1 tsp freshly-ground black pepper
1 tsp sea salt
1/2 tsp ground cumin
2 tbsp dried onion, minced
2 tsp paprika
1 tsp hot chilli flakes (optional)
lamb intestine casings

Method:

Combine the pork, breadcrumbs, savory and spices in a bowl. Mix well then use to stuff the washed and drained sheep casings.

These should be thin sausages made into 30cm lengths and coiled round. If you like, secure the coils with a skewer so that they retain their shape.

Cook on the day they are made. Traditionally they are barbecued but can also be grilled (broiled) and fried.
