Mititei (Romanian Minced Meat Sausages)

Mititei (Romanian Minced Meat Sausages) is a traditional Romanian recipe for a classic sausage-like meatballs made with minced beef and minced pork flavoured with spices and chilli paste that are basted with chicken stock as they fry to keep them moist. Ingredients:

250g minced pork
250g minced beef
1 onion, finely chopped
3 garlic cloves, crushed
3/4 tsp harissa
1 tsp sweet paprika
1/2 tsp smoked paprika
1/2 tsp cayenne pepper
1 tsp fresh thyme leaves
1/2 tsp baking powder
1 tsp caraway seeds, soaked in water and ground
1 tsp marjoram
salt and freshly-ground black pepper, to taste
1/2 tsp ground allspice (optional)
meat stock, chicken stock or vegetable stock, to baste
1 tbsp olive oil, for frying

Method:

In a large mixing bowl, combine together the minced meats, onion, garlic, harissa, paprikas, cayenne pepper, thyme, baking powder, caraway, marjoram and allspice. Season to taste with salt and black pepper then use your hands to knead the mixture vigourously for about 5 minutes, or until all the ingredients are thoroughly combined.

Divide the mixture into small handfuls then roll into sausage shapes. Heat the oil in a heavy-based frying pan. When hot, add the mititei sausages and fry over medium heat for about 25 minutes, or until well browned and cooked through. Turn several times whilst cooking and baste with a little stock (this will help keep them moist and prevent them from burning).
