Rice Wine is a generic term for an alcoholic beverage made from rice. In actual fact rice wine isn't a wine at all, but a beer as it results from the fermentation of rice starch converted to sugars. The rice wine employed in cooking is generally produced by the direct fermentation of freshly-steamed glutinous rice with yeast and spring water. As a result few carbohydrates are available for conversion to alcohol and the alcohol content is relatively low. It is often an important ingredient in Asian marinades and glazes.
