à la Espagnole is a description of the preparation of foods inspired by Spanish cuisine. These are characterized by tomatoes, bell peppers, onions and garlic, usually fried in olive oil.
Espagnole is also a basic brown sauce, one of the French 'mother sauces' which also contains tomatoes, onions and garlic and which was developed when Spanish chefs developed a new sauce for the wedding of Louis XIII of France and Anne of Denmark in 1615.
