Another: Prepare the green beans with ground mustard, honey, pine nuts, rue, cumin and vinegar.
Modern Redaction
Ingredients:
300g green beans
For the Sauce:
1/2 tsp mustard seeds
pinch of rue (or rosemary)
1/4 tsp cumin seeds
1 tbsp honey
4 tbsp pine nuts, finely chopped
2 tsp white wine vinegar
180ml beef stock
Method:
Add the green beans to a pan, pour over 4 tbsp vinegar, secure a tight-fitting lid and steam the beans for about 8 minutes, or until crisp tender. Drain off any excess water and keep the beans in the pan to stay warm.
In the meantime, pound together the mustard seeds, rue and cumin seeds in a mortar (or grind in a coffee grinder). Work in the honey and vinegar then mix with the chopped pine nuts and stock. Pour into a pan, bring to a boil then pour over the green beans. Bring to a simmer, allow to heat through then turn into a serving bowl.
