Lagman Spice Blend

Originally a Kyrgyz spice mixture used to flavour the meat, vegetable and pasta dish, lagnan, it's now used in the cuisines of Kazakhstan, Turkmenistan, Tajikistan, Uzbekistan, Uyghurstan and Afghanistan. Turlmen cuisine does not typically use spices extensively, but this is essentially a commercial spice blend that has entered the modern milieu.

Ingredients:

1 tbsp Sea salt
2 tbsp garlic powder
3 tbsp paprika
1 tbsp wheat flour
2 tbsp dried parsnip root, ground to a powder
1 tbsp ground coriander seeds
2 tbsp chmeli-suneli
2 tsp ground black pepper
2 tsp ground cumin seeds
1 tbsp dried coriander leaves, crumbled
2 tsp chilli powder

Method:

Simply mix all the ingredients in a bowl then spoon into a jar with an air-tight lid.

Store in a cool, dark place where it should keep good for up to 3 months.
