Chmeli-Suneli is a classic Kyrgyz spice mix that's rather variable in its constituents and contains one rather mysterious ingredient, Imeretic Saffron which is probably safflower Carthamus tinctorius. Though most commonly associated with Georgia, where it's known as khmeli-suneli, this spice blend is used throughout much of West and Central Asia.

Method:

Combine the ingredients in a large pestle and mortar and grind together into a medium-fine powder.

This spice blend is typically used as a component of Kyrgyz lagman spice blend.
