Lagman

Lagman is a traditional Kyrgyz (from Kyrgyzstan) recipe for a classic flour dumpling with a meat and onion filling that's steamed to cook. The full recipe is presented here and I hope you enjoy this classic Kyrgyz version of: Lagman.

Ladnan (Лагман) is a classic Kyrgyz dish of meat and vegetables served on a bed of spaghetti-like pasta.

Ingredients:

4 tbsp vegetable oil
500g beef or mutton, cut into thin strips
2 carrots, julienned
1 onion, sliced
1 medium green turnip, julienned
1 red chilli, finely diced
1⁄2 red bell pepper, julienned
2 garlic cloves, minced
50g chopped spring onion tops or other greens
1.5l water
3 tsp < href="./fetch-recipe.php?rid=misc-lagman-spice-blend">lagman spice blend
3 tbs tomato purée
350g package spaghetti noodles or fresh noodles
latza hot sauce, to accompany

Method:

Place a large, heavy, pot over high heat. Once hot add the oil and use to fry the meat until just browned (about 3 minutes).

Add the carrots, onion, turnip, chilli, bell pepper, garlic and spring onion greens and fry until crisp-tender (about 20 minutes). At this point add the water to vegetable mixture and bring to boil.

Stir in the spices and tomato purée then season to taste with salt.

Reduce the heat and simmer until the tomato purée dissolves (about 3 minutes).

Meanwhile cook the pasta in a large pan of salted boiling water until just tender but still firm to the bite. Drain the pasta then divide pasta among serving bowls and top with vegetable mixture.

Bring to the table and serve accompanied by latza hot sauce.
