Traditional Kitfo (Ethiopian Steak Tartar) is a traditional Ethiopian recipe for a classic dish of freshly-minced (ground) steak marinated in a blend of spiced butter and mitmita (hot chilli spice blend) before being served. Ingredients:
800g lean steak, freshly minced
100ml Niter Kebbeh
1 tbsp mitmita
wedges of green bell pepper, to garnish
Method:
Heat the niter kebbeh gently to melt then mix in the mitmita blend. Crumble the meat into a bowl and pour over the spiced butter. Stir thoroughly to combine then cover the bowl and set aside to marinate for about 20 minutes.
Turn the mixture into a serving dish, garnish with a few wedges of green bell pepper and serve.
