This is a more authentic recipe for Niter Kebbeh (Ethiopian spiced ghee or clarified butter) than most you will find as it includes the native herb, koseret, which both flavours and preserves the butter. It's said that the use of koseret will allow the niter kebbeh to last for up to 15 years.
Method:
Slowly melt the butter in a saucepan then bring to the boil. When the surface becomes covered with foam add the other ingredients and simmer, uncovered, on the lowest possible heat until the surface of the butter is transparent and the milk solids have drifted to the bottom (about 50 minutes).
Pour-off the liquid and strain through a double layer of muslin, discarding the spices and solids. Strain through the muslin a second and a third time so that the mixture will keep, chilled, for several months.
