This is a classic Ethiopian hot spice blend that is a crucial component of the raw beef dish, kitfo and which is also frequently served as a condiment. It is also sometimes sprinkled onto ful (bean) dishes before serving.
Though this recipe calls for dried piri-piri chillies, traditionally fresh chillies are collected and dried in the sun before use.
Separately toast the whole spices in a dry pan for a few minutes, or until aromatic. Toast the dried chillies in a pan for about 1 minutes, stirring frequently.
Combine all the spices in a bowl then, in batches, add to a coffee grinder (or a mortar) and grind or pound to a powder.
Turn into a jar, seal tightly and store in a cool, dark, cupboard.
