Sopa Puertoriqueña de Frijoles es Negros (Puerto Rican Black Bean Soup) a Classic Puerto Rican recipe for a soup of black beans in a condensed milk, olive oil and lime juice base flavoured with green seasoning.
Ingredients:
2 tbsp green seasoning
1.5kg cooked black beans (tinned is fine)
625g water
80ml olive oil
60ml lime juice
3 Maggi chicken bouillon cubes
200ml condensed milk
1 red onion, chopped
slices of lime, to garnish
Method:
Gently fry the green seasoning in a pan over medium heat for a few minutes, or until aromatic.
Take the pan off the heat and mix in the beans, water, oil, lime juice and bouillon cubes. Bring to a simmer over medium heat, stirring occasionally. Continue cooking until the mixture thickens. Season to taste
Stir the onion into the condensed milk.
Serve ladled into warmed bowls, garnished with a generous dollop of the onion and condensed milk mixture and accompanied by lime wedges.
