This is a classic Trinidadian seasoning mix typically used to marinate the meat the night before.
Method:
Combine all the ingredients in a mortar or a food processor and process to a thick paste (you can add 2 tbsp water to make the processing easier). Either use fresh or store in a sealed glass jar in the refrigerator.
It will keep up to a week.
