Guriltai Shul (Stewed Vegetables, Meat and Noodles)
Guriltai Shul (Sweet Flatbreads) is a traditional Mongolian recipe for classic sweet flatbread that can be served topped with jam as a dessert or for breakfast. Guriltai Shul (Гурилтай Шөл in Cyrillic) is a hearty Mongolian soup of vegetables, meat and fried noodles.
Ingredients:
150g Vegetables, Cut into small pieces
1 Onion, Cut in stripes
200g Meat or Borts Cut into small strips. (if using Borts soak for at least 10 min in water [the longer the better])
300g Tasalsan Guril (Fried noodles)
Water
Salt, ground black Pepper and Mongolian Spice, to taste
Method:
Place a pan over medium heat. Add a little oil and use to fry the onion for about 4 minutes until soft.
Add the vegetables (slow cooking types first) and keep frying. Add the meat and fry it as well.
Season to taste with salt, black pepper and Mongolian Spice. Keep frying until the spices are aromatic.
Add the fried noodles, and boil everything for about 5 minutes. Adjust the seasonings once more.
The soup can be finished with curds or cream at this point, if desired. Turn into a warmed serving dish and bring to the table.
