Garbansos con salchichas (Chickpeas with Sausages): A Colombian recipe for a stew of chickpeas and sausages with potatoes in a tomato and onion base.

Ingredients:

5 tbsp achiote oil (annatto oil)
1 medium onion, chopped
3 garlic cloves, minced
250g tomatoes, blanched, peeled and chopped
3 sausages
350g potatoes, cut into chunks
1 tbsp parsley, chopped
salt, to taste
300g chickpeas

Method:

Wash the chickpeas, place in a large bowl, cover with water and set aside to soak over night.

The following day, drain the beans, rinse under cold, running, water then place in a large pan and cover with hot water. Bring to a simmer, cover and cook for 60 minutes, or until tender.

In the meantime, heat the oil in a pan and use to fry the onion, garlic and tomatoes for about 5 minutes, or until soft. At this point, add the sausages and fry lightly.

Drain the chickpeas and return to the pan then pour in the tomato mix before adding the potatoes. Cover and cook gently for about 20 minutes, or until the potatoes are tender.

Turn into a serving bowl, garnish with the chopped parsley and serve.
