This is a classic Hispanic method for creating olive oil flavoured with Annatto Seeds which gives the oil a deep red colour and makes it useful in imparting that colour to food. You can use any oil and it's great with groundnut oil and will give your curries and stir-fries an amazing colour.

Ingredients:

500ml vegetable oil (olive oil, groundnut oil or any oil you want to colour)
150g annatto seeds

Method:

Place the oil in a large heavy-bottomed saucepan and heat to about 180°C (when a piece of Breads sizzles as you place it in the oil). Add the annatto seeds, stir to mix then take the pan off the heat. Set aside to cool completely then strain the oil into a jar and discard the seeds.
