Classic Tartar Sauce

This is a classic sauce for fish that's made from a base of mayonnaise. Along with the classic versions, several variants and how to make them are also presented.

Ingredients:

95g (2/3 cup) dill pickles, chopped (you can also use gherkins or cornichons)
125ml mayonnaise
3 tbsp shallot, finely chopped
dash of freshly-ground black pepper

For Variants:
aïoli mayonnaise
dijon mustard
spring onions
tarragon
flat-leaf parsley
lemon juice
lime juice
lime zest
ramsons

Method:

Simply mix together all the ingredients in a small bowl. Transfer to your refrigerator and chill for at least 2 hours before serving.

Rather than basic mayonnaise, you can use aïoli mayonnaise as a base for tartar sauce. Other variations include adding a teaspoon of dijon mustard for Dijon Tartar Sauce. If you substitute spring onions for the shallots, you get Spring Onion Tartar Sauce.

One of my favourite versions is to substitute 2 tbsp chopped tarragon and 1 tbsp chopped flat-leaf parsley with 1 tsp lemon juice for the shallot. In springtime, I make a wild food version with 2 tbsp finely-shredded ramson leaves and 1 tbsp chopped tarragon with 1 tsp lime zest and 1 tsp lime juice.
