This is a classic mayonnaise flavoured with garlic prepared from scratch, known in French as
sauce aïoli.
Ingredients:
1 large egg
300ml extra-virgin olive oil
1 tbsp fresh lemon juice
6 fresh garlic cloves, peeled
salt and freshly-ground black pepper, to taste
Method:
Place the garlic cloves in a food processor and pulse to mince. Add the egg and process briefly to combine.
With the motor running on low speed, pour in half the olive oil and the lemon juice. Now, with the motor still running gradually pour in the remaining olive oil in a slow, steady, stream. Continue processing until all the oil has been added and the mixture just thickens and emulsifies (if you over-process, it will separate).
Transfer the aïoli mayonnaise to a small bowl and season to taste with salt and black pepper. Cover and chill thoroughly then serve as an accompaniment.
