Carne na Cerveja (Beef in Beer) a Classic Brazilian recipe for a dish of beef cooked in a blend of passata and dark beer thickened with dried onion soup mix.

Ingredients:

1.2kg rump or topside of beef
400ml passata
8 pitted black olives, chopped
1 packet of onion soup mix (100g)
350ml dark beer
oil for frying

Method:

Trim the meat of any excess fat and sinew. Add a little oil to a pan and when hot, use to fry the beef until nicely browned all over. Remove from the pan and set aside.

In a bowl, combine the passata, olives, onion soup mix and beer. Pour into the pan where the meat was fried and bring to a simmer.

Add the beef to a pressure cooker and pour over the beer sauce. Secure and lock the lid then place over high heat. When the cooker comes to pressure, reduce the heat to stabilize the pressure and cook for 30 minutes.

Take off the heat and allow the pressure to reduce naturally. When you open the pressure cooker the meat should be cooked through and tender and the sauce should be thick.

Slice the meat and serve accompanied by the sauce.
