Carne en Polvo is a traditional dish from Colombia and the Dominican Republic that features tender chunks of beef cooked in a flavourful sauce. This dish is a favourite among locals and visitors alike for its rich taste and hearty texture.
History
Ingredients:
500g beef, cut into chunks
garlic and onion
salt
5 tbsp oil
2 onions, finely chopped
2 small tomatoes, chopped
250ml water
Method:
Combine the meat in a bowl with the garlic, onion and salt. Cover then set in the refrigerator to chill over night.
The following day, fry the meat in hot oil in a covered pan along with the onions, spring onions and tomatoes.
Add the water, stirring to create a sauce. Bring to a simmer then cook the meat for 5 minutes.
Remove the meat from the stock then pass through a mincer.
Return the minced meat to the sauce, blending to combine. Continue cooking until the mixture is almost dry.
