Albóndigas con Tomate (Meatballs with Tomato Sauce): A Spanish recipe for a classic dish of beef, parsley and egg meatballs that are fried and served in a tomato sauce.
In a bowl, mix the meat with 1 tbsp of the passata, parsley, breadcrumbs, beaten egg and garlic salt to taste. Mix thoroughly to combine, then shape into balls. Roll these balls in the plain flour to coat.
Heat the oil in a pan, add the meatballs and fry until golden brown all over. Turn the fried meatballs into an earthenware dish.
Crumble the beef stock cube into the remaining passata. Pour into the earthenware dish with the meatballs then pour over enough boiling water so that the meat is just covered.
Transfer to an oven pre-heated to 180°C and bake for about 25 minutes, or until the meatballs are cooked through and the sauce is thick.
